Easy Kale, Tomato and Basil Pasta
Ingredients :
- Two onions
- Three garlic cloves
- 8-10 leaves of Red Russian Kale
- Basil (4-5 big leaves)
- 2 large tomatoes
- Olive Oil
- Lemon Zest
- Balsamic Vinagre
- Parmesan (optional, but so much better with it )
- Spaghettini
- Two spoonfuls of butter
Instructions :
- Cut tomatoes into small cubes and put in a large bowl (this bowl will be used to serve the pasta, so select a good size that can take a bit of heat)
- Cut basil into small pieces
- Put tomatoes and basil in the serving bowl and add the zest of one lemon. Add 4 tablespoons of oil and one teaspoon of butter – set aside (leave in a warm place, like on your range while you do the next steps – remember, tomatoes should never be left in the fridge, if you did so, make sure your tomatoes get nice and warm in the bowl, before you add the pasta)
- Boil your water for pasta
- Chop onions into small pieces
- Cut/crush garlic cloves
- Wash and roughly chop kale (remove the thick part of the stem and keep them for smoothies!)
- Caramelize the onions and garlic at a low temperature (between 3-5 (with some butter and oil) for about 7 minutes
- When onions start soften or become lightly brown, add about 5 tablespoons of balsamic vinagre
- Add chopped Kale to cooked onions and garlic for another 7-10 minutes, until onions have slightly caramelized and kale is soft.
- Cook your pasta while the veggies are cooking (ideally, you should also be preparing a salad and nice garlic bread…)
- Once pasta is cooked, add about ¼ cup of the cooking water from the pasta to your kale and onion and mix
- Add the kale, onion and garlic to the tomatoes and basil, and add the pasta. Mix it all up and serve with cracked pepper and parmesan cheese! (and the garlic bread…and the salad…) Feel free to add some oil and/or butter to liking (yes, butter!)
