Kholrabi and Apple Salad

Ingredients for Salad :

  • 2 bulbs of kholrabi
  • 2 apples (any type of local apple will do, I like Empire)
  • ½ cup of walnuts (or any nut you have at home)

Ingredients for dressing :

  • 3 taplespoons of Rice vinagre (or any yellow vinagre, I wouldn’t use Balsamic)
  • 1 tablespoon of Mayonnaise
  • 1 teaspoon of Mustard (I used honey mustard or Moutarde de Maux)
  • ½ teaspoon of ‘herbes salées du Bas-du-Fleuve’ – or salt and pepper
  • 2-3 tablespoons of Olive Oil
  • ¼ lemon

Instructions :

  1.    Start by making your dressing. In a small bowl or mug, mix the mayonnaise and olive oil with a small whisk or fork.
  2.  Add the mustard and salted herbs (herbes salées du Bas-du-Fleuve) and mix well.
  3. Add the vinagre and mix well. It’s important to really mix the dressing because of the mayonnaise. You want a nice, smooth dressing.
  4.  For your salad, cut off the stems and leaves of the kholrabi (you can keep them and eat them as greens). Peel the Kholrabi and cut the veggie into juliennes.
  5.   Peel your apples and cut into juliennes. Squirt some lemon on the apple juliennes (i twill help keep the apples white but it also adds to the taste of the salad)
  6.  Roughly chop the walnuts
  7.   Place everything into a bowl and add dressing

 

Delicious as a BBQ side dish or for a healty lunch!

Ferme La Machine

Ferme La Machine farmstead in the La Petite-Nation, where we grow vegetables and tend a flock of laying hens. We believe in real food, permaculture principles and ethical production without compromise. We offer weekly CSA baskets of seasonal veggies, eggs, grass fed beef and poultry.

We bought a Heritage home that was one of the first organic farms to establish itself in the area. The Outaouais region has a history of organic farming that goes back to long before we called it organic. We are proud to carry on the tradition of small family farming on this beautiful, healthy piece of land in the area known as La Petite Nation.

We will operate Ferme La Machine from 2 locations. Our 5 acre Homestead in Montpellier, Quebec near Lac Schryer, and an additional 2 acres on the Plateforme Agricole in L’Ange Gardien, Quebec. 

We are new farmers starting our first season and we are pleased to be participating in the Agricultural Incubator program offered by the CREDETAO. Most of our production will be done at the Plateforme Agricole in L’ange Gardien which provides us with 2 acres of Organically certified land Certification by EcoCert Canada.

This year we’ve planned to produce 101 delicious varieties of 26 types of organic vegetables, fruits and herbs. Many of our cultivars are heirloom and were chosen for their natural resilience, rarity and taste! We will have staples that you are used to and new veggies to discover.

Our veggies will be available through CSA  Organic baskets, delivered weekly to a drop off point in your area and in local farmers’ markets.
